I've been homebrewing casually since 2008 and love learning about all aspects of beer from history, to culture, to process and marketing. Most of all though, I like kicking back with a good brew and relaxing.

I believe in this podcast, Palmer explains that he no longer thinks yeast autolysis is as big a concern as his original book. The hosts use a secondary for conditioning and dry hopping.

Additionally, I keep a large bowl to reuse the sanitizing solution for all the tiny pieces like stoppers and airlocks. I keep this bowl throughout brew day so that if I accidentally touch a part against something dirty, I can just dunk it in the sanitizing bowl.

What is a brite tank? Is that analogous to a secondary fermented in home brewing? Or is there more done in the tnk at the commercial level?

I watched the video with the carboy cap. Does CO2 cartridges fit in the second outlet where he used his breath to start the siphon? I wouldn't want my nasty mouth germs to contaminate my brew.

I was thinking along the same lines as Graham. It might be a good idea to break them up into smaller pieces first. Also, to put them in an already fully heated pot, instead of putting it into a cold pot and bringing it up to temperature
