Totally agree Denny, in fact - that's usually what I do. The only reason I'm planning on transferring to secondary this time is because that's when I'm going to add the coffee and vanilla... plus I want to free up my glass carboy for another batch.

Thanks PMV, not my first porter, but it is my first batch at this time of year... thus the colder temperatures. I hope you're right about not noticing it... I'm just looking forward to tasting it to find out! This is only my 6th or 7th batch, and my first attempt at a secondary fermentation - and adding flavors during it, so I'm a little nervous but excited too. Appreciate your comment.

Thanks. The OG on Sunday was 1.069, haven't re-measured since then. I'm going to let it sit for about 4 more days before moving it to secondary and will re-test then. I'm hoping that will help with any of the possible by-products. What temp range should I aim for between now and then, and then once in secondary?

Voted up - I thought this was a useful comment - not sure why it was voted down in the first place. It seems like it might be possible to impart a unique flavor into the beer by pitching a new strain in the secondary fermenter... if you racked carefully, making sure to leave most of the yeast from the primary. I have no idea how well it might work - but would be fun to try.
