@WalzenBrew Chris' approach is how you want to size your HLT. My tl;dr would be: figure out how much water (or liquor, if you prefer) you need in the mash of your biggest beer and get a kettle at least big enough for that. If you don't want to refill for the sparge, double it.

comment How do I avoid airlock foam overflow? Does it affect the fermentation process?
I blew through two airlocks fermenting with BRY-97 before switching to a blow-off. I recommend a growler filled about 1/4 with sanitizer for the container. The guy at my LHBS was able to hook me up with a small length of rigid plastic that fit the airlock's bung and beverage tubing.

Copper at the hardware store, steamer basket at the kitchen (or grocery) store. Not sure on the copper prices, the basket is $2-$4. Pretty sure $10 is the right ballpark though.

If you're using pellets you shouldn't need a bag. After a couple days the hop pellet particles will all be at the bottom of the fermentor.
