Why is a carboy used for secondary fermentation? @brewchez Perhaps "extraordinary" is too strong, but plastic buckets let in more oxygen over time than most other vessels. I don't mean to say you can't make great beer with them, but you should be aware. There's a great chart halfway down www2.parc.com/emdl/members/apte/flemishredale.shtml showing different oxygen permeability over time. |

[WIKI] Fermentation Temperature Control Methods @C4H5As the reason to tape your probe to the carboy is that you want to measure the temperature of fermentation, not the temperature of the fridge. You might not notice a large difference most of the time, but when you're first normalizing the temperature of the beer and as the yeast is ramping up your bottle of water will be significantly behind the temperature of the beer. |

Why my homebrewed lager beer bottles explode? Well, technically you're starting up a mini-fermentation to bottle condition anyway. Were you able to smell or taste any of the beer from the foamy bottle? Does it smell or taste off in any way? That would be one indication of a bacteria. |
