Bottles didn't carbonate, anything I can do? As an aside - more and more refrigerators have their cooling coils in the bottom, not in the back, making the above warmer completely ineffective for any sort of yeast-related activity - beer or bread - which is a bummer. |

Belgian witbeer: Which fermentation temperature in comparison to a Bavarian Hefeweizen? Can you clarify the last two sentences - they seem to be at odds with each other. I thought that "fruity esters" was synonymous with "banana character". |

How long does StarSan last? pH test strips are both cheap and readily available, and plenty accurate for this use. That said, I'm not sure that I'm anal-retentive enough to test it every time, either. |

How do I prevent off-flavors in ciders Can you still treat champagne yeast as though it were an ale (warm, top fermenting), or is cooling required? And do you have specifics on pasteurization (time & temperature)? It's possible that I haven't used sufficient temperature (~160 degrees for 10 minutes). |
