Can I add finings after fermentation has begun? Same thing happened to me on my first AG batch--a sessionable pale ale. But it cleared very well with three weeks in primary and no secondary. After force carbing and letting it sit in the keg for a few days, the sediment came out in the first pour and the beer was nearly crystal clear. I'm fairly certain that if I racked to secondary before the keg it would have been as clear as possible, all without using any finings. The grain bill was pretty light here though, so that may have helped it clear more quickly. |

What causes a stout's creamy head? It's not nitrogen "instead" of CO2, it's a blend of about 75% nitrogen and 25% CO2. If you're kegging, there are blended tanks that you can buy to force carb the beer. You can't do it if you're bottle conditioning, but there are ways to bottle from the keg. |

Converting your fermentation bucket into a mash tun I believe the question is referring to the "Zapap Lauter Tun" system, in which you drill a lot of holes in the bottom of a bucket. So of course, the bucket ceases to be a fermenter at that point. Bacteria is not a huge concern here. |
