Is RTD beer susceptible to any damage from temperature fluctuations? Brewchez is right. Plus, extended higher temperatures can cause over-carbonation. |

Help with Hop Analysis This will be the third year. It may be due to the age of the plants, as suggested or just the climate here in Wisconsin. Interesting points, though. |

Does a single FermCap addition control both boilovers and blowoffs? Excellent question on a little-discussed product. Upvoted. |

Help with Hop Analysis Wanted to add as an aside, this is a great idea, just not sure it's practical. With reasonably accurate numbers, home brewers could use home grown hops to much greater effect. Right now we just guess based on the min and max alpha of the variety. |

First Fermentation And Worried Something Is Wrong Jeff's right. It's all good. Sometimes they are done in three days. Sometimes they are done in a week or more. Different yeast, different ingredients, different locations, all make a difference in fermentation time. Never trust the bubbles. Let it go 6-7 days and get a gravity reading. |

Adding potassium metabisulphite (i.e. sulfites) to prevent oxidation? I've been brewing for three years. The oldest beverage I have is mead, which is about three years old. |

Benefit to smaller bottles? Fourthed - Heh on the biggest beers, such as a Chimay Blue clone we make, we use big swing-tops, but still make a few 12oz bottles too, for when we don't want the quantity. |

What are some ways to make low-carb beer? Good answer. Although I was going to answer smartass and say "go buy some light beer" :-) |
