I normally do mine every five "rotations" of beer. I increase this if the keg hasn't been under pressure since in theory the positive pressure should keep the nasties out. there's no hard and fast rule, it's completely up to you!

you should also see the low pressure change move down as it absorbs the CO2. When you stop rocking it'll slowly go up. Also, the keg will feel colder.

Yup, they're not good for fermenting since they're thinner walled and easier to scratch. A lot of must now comes in boxes, so you may have to wait a bit before you find any. I have 2 dozen of them in my basement, all labelled and easy to access.

comment How much heat can a demijohn take?
This, or use a small gas burner and a big pot to dispense it, I've had a lot of hot/warm cider, and it's never been carbonated, so you won't need to worry about this. Anything that isn't heat/shock resistive glass (Pyrex, brosillicate, etc...) shouldn't be used with heat.
