I tend to agree with you. I think my biggest mistake was not pitching enough yeast to begin with. Followed perhaps by not aerating enough at first. In the future, I'll try to look out for these parameters in high-gravity brews, because apparently I'm not equipped to handle second pitchings.

Five days later ... absolutely zero change in gravity.

I decided to pitch a packet of T-58, right into the fermenter. I rehydrated and proofed with a little sterilized sugar. I'll give it a few days and check on it ... thanks for the tips.

The whole thing is kind of exciting though because I've never had to repitch. And thus begins a new brewing adventure.

I botched my day's plans and couldn't get to the store in time. It'll have to be tomorrow. I really hope I haven't accidentally aerated the mix when I swished it around.

Absolutely not, having more than one batch going at once is beyond my skills/equipment. What is so terrible about aeration at this point?

I aerated as vigorously as possible by hand. I think I will try to pitch more yeast. I'm not sure how the new yeast will survive without aeration, though...?

Pitched one packet of S-33, it proofed like crazy almost immediately. I do not have the exp. date anymore. Recipe has FG at 1.026, but that was for OG of 1.096, which I overshot by 0.007.
