Any suggestions / stories on heather ale brewing? This is a great answer and I am interested to see what comes of the heather beer. I just brewed a "classic" gruit with yarrow, mugwort, marsh rosemary, & sweet gale based on a recipe from that gruit house site you mention. It sounds like these kinds of beers really benefit from aging, so I'm going to let it go a few months before trying it. |

What is a good definition of beer? I agree -- the Reinheitsgebot is just a German definition of beer; and one I find quite stultifying and, well, very "German". It really has nothing to do with the overall definition of what beer is. |

How do you malt your own barley? As a little bit of an aside, I'd probably want to buy the barley from a feed store (as in farm animal feed store) because you can get a 50lb sack of barley for $15 or so. Then your experimentations will not be so inexpensive! |

Undershooting OG in all-grain brewing Hm, I think it could be geometry then because I had to add some water to the boil to get the right amount of wort for the boil. I would think if I added 4 gallons of strike water, the grains would soak up more than just one quart? I know in the case of this brew, it soaked up significantly more than 1 qt.. maybe like you say, closer to a gallon. So I guess I need to find a way to leave less in the mashtun. What would suggest I look at? |

Does yeast choice matter as much in ginger beer? It's not such an exact science based on Katz's recipe.. however I have been weighing the ginger in my experiments. I used about 3oz of ginger per gallon in my latest batch, but I'm still working on figuring out the best ratio for my tastes. |
