comment Any People with Celiacs Tried Clarity Ferm?
Any references for what the gluten PPM would be, sans Clarity Ferm? Just curious.

So far, so good. No pellicles since the chilling. Been drinking them, and I'm not dead, heh. They're very dry and very spritzy. No mouthfeel to speak of.

Well, been drinking them. I think there may be a hint of sourness, but I could attribute that as much to the berries as the bugs. They're certainly spritzy. But no more visible pellicle on any bottles since I started chilling them.

comment If/When to move to secondary fermentation
@Jim- that's the clearest answer to OP's "a" part on here. Keeping it simple.

Another note, post-edit: I drank one that I started chilling ~2 days ago; it was pretty good. Nothing particularly horrible-tasting. I went ahead and put the 36 "clean" bottles in my new soon-to-be fermentation freezer at 40˚F to try to prevent any more growth.

Note: day 5, no pellicle or bombs so far. Going to wait until day 7 to cool down and pop one open.

@MatthewMoisen - I think so. I read about the process for pasteurizing, but in most of the first-hand accounts of brewing with fruit I could find online, folks said they didn't bother with either. Just freezing to break up the cells' internals.

Man, you tempt me to get a couple 1-gallon secondaries and try for a test... there are a lot of potential confounding variables, though. I mostly just want to support organic principles and minimize my chemical cocktail uptake.

No rinsing; there was a lot of syrup that I wanted to keep for flavor. They were previously frozen, but IIRC they were in the fridge to thaw out (in the bags) for about 3 days.

@MatthewMoisen - personal preference.

This is only my 4th batch, so I don't know what to expect an infection to taste like. I can only assume that natural selection will have made it fairly noticeable, if it's a problem. And I've heard the SG is generally bone-dry for many infections? Mine was pretty much on-target with expectations.

comment Fridge recommendations for fermenting
I just bought one of these from Lowe's, same price. Got the Johnson A419 (single-stage) controller. Can't wait for it to show up...

comment Johnson A419 BLE/WiFi Modification
The more I thought about it after posting, the more I figured there wasn't much reason to have the Johnson in the loop at all... an Arduino ought to be just as good at closing relay contacts.

That's one light, clean answer.
