Possible to intensify/increase the amount of yeast flavor? @DennyConn Ya, the recipe was the same as my previous hefe. One thing I question if it made a difference, was I scraped the yeast cake off after 24 hours, so that it could form again. I wonder if the yeast cake is left alone, that it almost acts like a sealed barrier between the active yeast under neath and the air above. In the Brewing TV episode, they actually do this 2-3 separate times, along with mild agitation. |

What solution of hard alcohol is sufficient to sanitize and infuse something for addition to a fermenting beer? I would do this before adding booze...like @DavidPGB stated, making a "tea" works well. |

Freezer-pack-based cooling +1 I would recommend the same. And definitely submerge the fermentor as much as possible. |

Carbonated in carboy from primary fermentation? @mdma I understand very mild carbonation often occurs in fermentation, but I meant specifically the act of the beer foaming and over flowing from the addition of sugar. |

Carbonated in carboy from primary fermentation? You make it sound like this type of behavior is common place and completely logical...I have never had anything like this happen to me before, nor heard of this type of thing happening. Is this something that frequently happens to you? |

Carbonated in carboy from primary fermentation? Not to beat a dead horse, but I am with Henry and Tobias on this one. If the true FG was 1.002, I'm pretty sure your beer would not taste very good at all. And since you said it does taste OK, I would probably just throw that reading out. |
