Ash/ash tray off flavour When did you add your dark grains? At the start or end of mash? |

Recovering from low mash efficiency - under-shot pre-boil gravity There is hope, Beersmith has been very accurate for me on how much sparge water to add, like Tobias said, keep measuring and updating Beersmith and it'll work out. |

Mash-produced unfermentable sugars do add sweetness and aroma? Could you provide some links to where you read these? |

Using unknown loose hops @HenryJackson you may want to make this comment a separate question |

Reusable Beer Label I would suggest this sort of treatment and also have your dad be more careful with these bottles, IE rinse them more thoroughly after drinking, to ensure that soaks in StarSan aren't required. |

Why are there flakes in my beer after 5 days? A photograph would be a nice addition to this question. |

Naming Homebrews Hey Matthew, fire.eagle is right, the direction we are trying to set for the site is to avoid poll questions. As stated in the FAQ "...avoid asking subjective questions...". I hope that you are able to ask some other questions or answer some that other people ask. |

Hydrometer reading A thief is worth like $5 from your LHBS or online, so purchasing one may be a better plan. |

Hydrometer reading @FrustratedWithFormsDesigner, it's essentially a tube that you stick into your beer/wine and it will pull off the right amount for your hydrometer. The images on the internet are fairly poor though. Denny's turkey baster is pretty much exactly like an actual wine thief, mine doesn't have a bulb on the end though, so I need to wait for it to fill up (it's pretty slow) |

How do I decide if the beer is ready? Is my fermentation complete? +1 to baka's comment, also what is the temperature of the fermentation area? If it's too cold it won't ferment properly. |

How much distillers yeast do I use in a 5 gallon batch of beer? Thanks Scott, that recipe is an interesting read. I still don't know how much you'll need though. Hopefully someone else has a better response that I can give :-/ |

How much distillers yeast do I use in a 5 gallon batch of beer? I'm with jsled, this is a strange practice. If you could provide some additional details about what style you're attempting or the recipe then that would assist us in answering. |

What class of beer is Newcastle, and what do I need to brew my own? Check out the book Clone Brews amazon.com/CloneBrews-2nd-Recipes-Brand-Name-Beers/dp/… It's got a great Newcastle recipe |

Can I top off my batch at bottling time with water? In this case, I would think that you would better off reducing the priming sugar instead of adding more water (unless you had already added it) |

Secondary size? Like TinCoyote mentioned in his answer, I try to ensure there is enough room in my carboy to hold all of my beer. |
