comment How worried should I be about a plastic-wrapped kettle that had to air chill for two days?
Aging now. Out of primary there were some bitterness issues, but no sourness/yeast contamination notes. If those flavors are there, I can't taste them; it's a big, roasty, dark stout, so it could be there and just covered up.

comment What does it mean when a recipe calls for a boil addition of coffee in pounds, but also mentions brewing the coffee?

comment lemon flavor after kegging
This is probably a dumb thing to say, but if it only appeared after kegging, check the keg. I had a porter that I kegged in a corny that I swear I scoured, sanitized, and changed the O-rings on, but it ended up introducing a bizarre, artificial-citrus flavor. My only theory is that somehow the orange soda that the corny had contained at some point had seeped into the metals or something.

comment What solution of hard alcohol is sufficient to sanitize and infuse something for addition to a fermenting beer?
Wouldn't simmering increase bitterness, though? Both by reducing the liquid and enhancing the bitterants in the vodka, and by releasing tannins from the bark/seeds I'm using for flavor?
