It's difficult to say from your picture. It could be 'yeast floaties' too. Regardless, I doubt it's anything to worry about (unless they start to look fuzzy and get bigger like mold).

Maple sugar != maple syrup. According to Wikipedia, maple sugar is about 90% sucrose (table sugar), the remainder mostly glucose and fructose. Not a fair downvote.

Drill a 1/2 inch hole. At my LHBS a plastic airlock goes for $1.99.

The difference between 1.003 and 1.002 is so small (especially if measured with a hydrometer) that I would consider it measurement error most likely.

After considering the answers here, my current plan is to get another bucket fermenter and rack the beers to the plastic carboys. The mead I'll do directly in the carboy and let it sit for a few months. Thanks for the insight!
