Thanks for the info about forced ferment. I have a feeling it's just done and will end up being sweeter than I anticipated. Not sure what else to do since EC-1118 is about the toughest yeast around.

It's difficult to say from your picture. It could be 'yeast floaties' too. Regardless, I doubt it's anything to worry about (unless they start to look fuzzy and get bigger like mold).

Maple sugar != maple syrup. According to Wikipedia, maple sugar is about 90% sucrose (table sugar), the remainder mostly glucose and fructose. Not a fair downvote.
