I'm surprised everyone is raving about the scaling feature on Beersmith. Unless I'm missing something, it seems like it scales incorrectly on custom equipment or with custom efficiency.

You can find glass marbles on amazon or probably some place like bed bath and beyond. Don't get painted ones obviously. Let us know how your beer tastes.

Graham, I disagree about staying in primary for two to three weeks. Many routine recipes are improved by getting your beer into secondary. Once fermentation is primarily complete (low activity), there is more benefit to getting off the yeast cake than to leaving it in primary. Sitting on the yeast cake can result in off flavors from autolyzation.

If you are a beginner brewer and go with PET, I would strongly consider reading the 'cleaning and care' instructions on the Better Bottle website before you buy them. The limitations on the amount of exposure to StarSani and PBW that these bottles can take are very restrictive. When I was a new brewer, my brew buddies and I cracked one with excessive sanitation. The other two from the same vintage are still intact but show signs of cracking. Glass rocks!

High-risk way to start, that's all I'm saying. I share your tastes. Plus if you make 'regular' beer, you can make your friends drink your mistakes. Good luck!

Ok, I don't want to be responsible for your dog's death but the amount of chocolate in a 'chocolate' beer is probably not a concern. A mid-size dog can ingest 'some' chocolate. Check out the theobromine (the toxic part of chocolate, found in other foods as well) page on wikipedia for some ideas about dosage (LD50, TDLO)en.wikipedia.org/wiki/Theobromine_poisoning
