comment When am I supposed to add my dark grains
FWIW Gordon Strong recommends steeping dark husked grains instead of mashing them like you have outlined. I have never done it myself, but he has won a few more competitions than me ;-)

comment My beer is not carbonating in my Keg
So you get spray from the beverage port when you gas the full keg with no beverage line attached? It shouldn't matter if the beverage line is attached, so I would check elsewhere.

Too many variables... I'd hit the keg with about 2-3 psi for a few minutes then detach the lines. Come back in the morning and see if you have pressure when you vent the gas poppit. This will give an easy indicator if you have a leaking o-ring (or other keg component). The lines you can submerge in a bucket of water to check.

Interesting comment on the surface area of the immersion chiller... I've read about creating a recirculating immersion chiller, but assumed the plates were superior in some way.

Do you have problems with trub settling in the kegs and potentially clogging the dip tube?

I did top it off. Am I the only one who has this problem? Surely not.

comment Do I truly need a wort chiller?
Do you find that the plate chiller and pump speeds the process enough to justify spending like $300 on it? I do 6 gallon batches and typically cool them in about 30 minutes with a daisy chain IC setup. I've been looking at PC's (Therminator) in conjunction with a March pump and they look really cool, but I wonder if the cost can be justified by the time savings or not.

comment Does C-Brite require rinsing
For what it is worth, my routine is PBW -> Rinse -> StarSan (no rinse).
