Thanks for the help! So when you say to purge all the air out you mean immediately after I have shaken it with the inflow of CO2 at 30psi or do you keep purging it each day? And finally do you hook the CO2 back up at all when serving from the keg or should it be fine without since it will be fully carbonated after a few days of 12psi injections when its in the chest freezer?

I used his spreadsheet for my mash and then I just entered my sparge runoff volume back into the spreadsheet and only adjusted for gypsum, epsom & calcium chloride to match the adjustment numbers of my initial mash calculations.

Listening to his explanation and reading more I'm starting to get it now. I've come across some interesting points that state that on your second addition in the kettle (or for some people they add it to their sparge water) you would only treat for flavor & calcium and not Ph at this point. So you would only be adding epsom or gypsum or calcium chrloride, not any chalk or baking soda. I have found this is where Palmer's spreadsheet is lacking because he even states on Brew Strong that you want to treat your sparge runoff, but he never says how and neither does the spreadsheet.

I needed 2 packs because it was for a big beer with a gravity of 1.095 and I didn't have time to do a step starter so I went with more yeast to start with to reach my desired amount.

That's what I figured, but I always just like a little reassurance. This thing is a beast, 36hrs later and still good activity and huge head. They better be ready cause they are going into a 1.096 DIPA today

comment Converting Hops in All-Grain to Extract Recipe
so someone suggested to me to start doing late malt extract additions instead of all of it at once before the boil. But when I put that into Beersmith it jumps the IBU to 291. Which doesn't seem right at all. Does a late addition effect the IBUs that much?
