comment How many times can I re-use oak cubes?
brewchez I'm confused, I thought tannins are exactly what you wanted extracted from the oak.

Completely agree with Denny. I would recommend tasting every batch at bottling time, and not trying to come to any conclusions at all until you've brewed quite a few and know what to expect.

Just brewed it, and did a double batch sparge. Color was definitely stronger in the second sparge (of the "second" runnings). I also waited 15 minutes after adding water before draining. So far, it's looking like a good method to me. I think Denny is right though, I think I could get away without it, but seems like the color is benefiting, if nothing else.

I definitely appreciate the input. As it turns out, my stout recipe has been brewed three times, and I love it. You're absolutely correct, and a full pound of black is alot. This is based off Papazian's Silver Dollar porter. I should call it porter, but that gets into a different type of argument.

comment How do you come up with a recipe to use for “Second Runnings”?
Also, beware, there are quite a few mistakes in those tables. I'm assuming that the general trend is correct.

Good catch on the DME vs liquid. Jarrod, if you're new and haven't already purchased a hydrometer, I can't encourage you enough to get one. I spent too many brews without one, and when things go well, you can get away with it, but when they don't, you MUST have one to begin diagnosing problems.

Also, please don't forget that high-gravity wort can be delicious without diluting as well.
