An avid, ambitious homebrewer, I'm currently brewing on an all-electric system capable of 20+ gallon batches.

comment How to tell if (and recover from) a diacetyl rest was done too early?
@Graham: 1 packet / 5 gallons is underpitching? Let's see what the website says...80-120 g/hl. 1hl is 26 gals...so for 16 gallons that's...er...50 to 74g. I pitched 34.5g, so I guess so. I'll know for next time, but the sample was certainly good enough that I drank the whole thing. Time will tell how it finishes.

For the record, I just checked mine after 3 days - I'm at 1.024, which is about 65%. That's 16 gallons with 3 packets of Saflager S-23. Best part about sampling is drinking it...it's delicious!

This is a very timely answer. I was planning to start a D-rest on my lager today, but forgot about the 80% gravity.

comment Accidental steam beer, temp control and diacetyl
I managed to get my temps under control, but this answer is just the info I was looking for. Thanks to you both for the comments about S23 as well. I'm keeping the temp a few degrees higher because of them.

answered can you dry hop in the primary, or do you have to rack into a secondary in order to add the dry hops?

comment How to lower Final Gravity?
+1. It's highly unlikely that beer is going to ferment out any further.

comment Something in the fermentation chamber made my nose hurt
Yep, I've had the same thing happen when I overzealously whiff my fermentation chamber. Nose burns, eyes water, swear words fly.

Nice answer. +1 for the link, and for not suggesting Teflon tape will help the seal :)

A long shot, but have you calibrated your hydrometer? No off-flavors from possible infections?

comment How much weight to add to a dry-hop bag?
Not an answer to your question, but I've stopped using dry-hop bags entirely unless I'm dry hopping in the keg. Which I've only been foolish enough to do once :) I find just tossing the hops in the fermenter is plenty effective and a lot easier to deal with.

An interesting question I've often wondered about myself. +1!

comment Slight fizz in beer after 6 days in the fermenter - game over?
Great, glad to hear it! Once you get it in the bottles and conditioned for a few weeks, I think you'll be happier with the flavor. Age cures many beery ills. Or at least helps ;)

That's certainly what I would do. I've learned that extra time in the primary will usually improve a beer.
