It looks like the innovative part is that the CO2 cartridge is inside, with the beer, instead of outside, with the tap (like MillerLite Home Draft / Tap-A-Draft). Apparently this has been around for over five years and I've never heard of it, hehe.

comment How long can I expect cider to keep fermenting?
If you use some kind of pipette for taking a refractometer sample, and you sanitize first in boiling water or no-rinse sanitizer, you'd be best advised to suck up a little bit of cider, throw that out, suck up another sample, and drip that on your refractometer. Otherwise you can dilute your sample with the tiny bit of water/sanitizer on the pipette; when your sample is tiny, even a very small amount of 'water' will screw up your reading.

If Primo is allowed to sell water in that plastic, then I'd say its fine for any human consumable liquid! Primo wants the bottles back, so they wouldn't be motivated to make it easy to recycle them. They also say use for water only, but I think you could get away with Kool-Aid or Iced Tea.

My crazy starter did quite well...krausen filled 2 gallons of head space and blew off a few cups before I got some fermcap-s on it!

Since the attenuation has already happened, there's probably no hurry to drink it. In fact, I had an unintensional brett contamination once that was horrible 'cherry pie' flavor. I left it for a month in the garage (up to 80F), then figure I'd get rid of it at the drunken end of a party. But it 'cleaned itself' and actually tasted good! I took it home with me!

I'd be more worried about the label glue getting deposited inside the bottle (dissolved into solution, then deposited on a bottle's interior). So even though it's a pain, I keep the bottles upright.

For the ones that don't come off easily with Oxi Clean, I throw them out and make a dumpster dive run to the local craft beer bar on the morning after a beer with easily removable labels was on special!

I taste oxidized beers all of the time at the various homebrew clubs I attend. Those brewers know what not to do, but they still end up with stale beer, so I'd say you can be careful, and still get oxidation.

Yep, the plan is exactly as you have outlined... crazy starter is on the stir plate as we speak, and the healthy slug of WPL099 is planned. BTW, the only reason I'm doing this massive beer is that I won a 55 lb bag of marris otter!

The idea was to use the WPL-099 after a few weeks, after the original yeast gave out. Presumably that yeast would take over and carb up the bottles. Yeah, I'd not just throw it in at bottling time...that would be a disaster!

comment Sanitization practices when dry hopping in a muslin bag
UPDATE: I have updated my process to use the boiling technique. I've got a little electric teapot where I put the bag, weights, and floss. I also have added rubber gloves to the process. I pour off the water after boiling and after a few minutes I can handle things with gloves, even though still hot.
