Engineer by degree, but I code for a living. Recently switched to using a tablet for leisure internet, like this site, but the on-screen keyboard is horrible, so please forgive my missing letters and things!

Might be helpful to post the specific yeast strain you used, and the preferred temperature range for that yeast. That's a pretty large temperature range too! I usually keep it within 3 degrees F.

comment What are the hops varieties Sticklebract & Galena?
Please forgive my American-centric views. I must learn that just because we're conversing in English, it doesn't mean we all are in North America. My bad. Although it is an "American hop", you're Galena is probably really grown in Italy after all.

comment Controlling exothermic heat from primary fermentation with A/C cooling duct
You can get electronic temperature sensors for like $5, delivered, from Taiwan on eBay. They have a sensor on a 4 foot wire with a readout on the business end. Fermometers are ok, but you need to lift the box to see the temperature. I put the sensor on the carboy with a chunk of styrofoam to insulate the sensor from the air, then tape it in place. Works great.

comment fly sparging - stopping and efficiency
I'm no expert, but I've witnessed four or five fly spargers in action. Seems like about half of them left the mash tun full of water when they quit pulling from the mash tun, but the others had a limited amount of water in the hot liquor tank in the first place, so fly sparging stopped, the level in the mash tun went down low or emptied. Do these two techniques have different names?

Glelena is typically American grown and very common; I'd expect it in your homebrew store. Stickelbract is a New Zealand hop in the 12% alpha acid range. You might consider editing your question, removing the Italy reference.

comment Should Priming Sugar Solution Have Minimal Oxygen?
Thanks guys. Confirmed my suspicions. Sticking to the minimal O2 after fermentation kicks off.
