90-minute boil for pilsner malt? Another point to reduce DMS probability - quickly chill wort down to below 80*C, because the SMM->DMS conversion requires temperatures above 80*C. And 60' boil can be sufficient, but there is too much risk. |

Does anybody else skim the protein off the top of their boil? That's right point - i have 29L kettle and 27L of wort easily boils off if i don't remove them before hop addition. |

Is the iodine test for starch conversion pointless? As long as you know that iodine tests for starch in solution, there's no ambiguity. But still, you can have starch in grain particles. Anyway, given sufficient mash time, you'd always get complete conversion, so in most cases is not necessary. |
