There is an interesting situation going on now between Northern Brewer and Bell's Brewery over a trademark issue between their three and two hearted recipes, respectively. Northern Brewer doesn't claim it to be a clone, but Bell's begs to differ.

While I know this is true, this isn't quite my problem. My beer is usually gone within a month or two, but doesn't really capture that hoppy aroma.

Mead is considered beer too even though its basically honey and yeast. I was just making an example. I think the beer in question has hops though.

I think you misunderstood my question. Mike S's answer is more what I was looking for. I know why the packet of wyeast inflates. I am just curious about the actual fermentation and secondary, what makes the optimal use of the yeast.

How exactly are you bottling? I've never really had this problem, but I let my fermentation go for as long as possible. A friend of mine was having this problem and I found it was because he was taking the priming sugar and putting it directly inside the bottles rather than dissolving it in water then putting it in the beer then bottling.
