I've been brewing for about 2 years now. Extract + Steep is my current level of sophistication. Member of the Mile High Garage Brew Group and founder of The Weiss Guys. Just starting to get into cider / applewine. My reputation here (the site about what I do for fun) has just eclipsed my stackoverflow reputation (the site about what I do for work). I think my priorities are a-okay!

True, and usually I just go by taste. In the case, however, I want to have as close to an "apples-to-apples" comparison. If the Belgians age for a few weeks at the brewery, plus a month or two to ship it here and sit on the shelf, 60-90 days should get me in the neighborhood.

Both true, which is why I like to get most of my sugar from the malt. But I have gone as high as 15% of the grain + sugar weight in turbanado in a big Barleywine without noticeable problems.
