Belgian/Canadian Tripel Recipe Question The beer ended up tasting good. I also feel like there was too much "spice", but like you said, the last bottles (6 months after bottling) were much clearer, and had mellowed down quite a bit. In the future I would probably reduce my spices to 20% of what I had, and would use a lot more hops late in the boil and maybe even dry hop a little, and go for a strong Belgian Pale with a good hoppy aroma! |

Is a cider-like smell a bad sign in a culture of beer yeast? The beer turned out great! It has a distinct Unibroue flavor along with the other flavors I added. If you like La Fin Du Monde then I would recommend culturing your own yeast from a bottle or two! |

Is a cider-like smell a bad sign in a culture of beer yeast? I pitched a 2L starter into my primary last night on my first batch ever! The krausen was so big it popped my top off, so I quickly re-sterilized put it back on, and developed a blow off valve system similar to what I have seen on some carboys. Let's hope it turns out okay, I will fill you in on if the beer comes close to La Fin Du Monde's flavor. |

Beer calculators and batch/boil size with late fermentable additions I was under the impression that the massive IBU changes that happen in the calculator when I change boil size are purely due to the increased gravity, and it's pretty significant. For example, in my recipe, going from a 4.5 avg gallon boil to a 2.5 avg gallon boil reduces IBU from 22.4 to 11.1. That doesn't seem negligible to me, unless the calculator is wrong. |
