To support my research on ecosystem functioning, my collaborators and I are developing PEcAn, a model-data synthesis framework (www.pecanproject.org) and BETYdb, its underlying database (www.betydb.org).

comment Do I need to sterilize my top-off water?
@brewchez I would be concerned about the effects of chlorinated tap-water, which would inhibit yeast growth (although Cl can be evaporated with time or heat). Filtered water may be a better idea.

@theraccoonbrew indeed, some will be used for wort, some for syrup, and the large scale is a consequence of available resources. I have taken off the flow rate requirement though. Still, I expect that it will take as much as 200 gal of sap to make 20 gal of wort.

@theraccoonbrew would you feel differently if it was wort instead of sap? either can be used as a substrate for ethanol production.
